There has to be a bazillion different ways to make Texas Caviar. However, I was on a mission to find one that was the cleanest (void of store bought dressings) AND the tastiest version around.
Did I find it? Well, I found a lot of them and finally whipped up this recipe which never lasts longer than 1 sitting at our house. We eat it as a snack or as a side in our lunch boxes!
My favorite parts about this Texas Caviar recipe: it’s made with real food, most people have these spices on hand and there is zero added sugar, Stevia or sweetener! Just give it a few hours to let the flavors meld and enjoy.
Classic Texas Caviar Recipe
Total time: 10 mins (+ 4-5 hours of refrigeration before serving for best taste)
Ingredients:
- 2 cans black beans, drained
- 2 fresh medium tomatoes, diced (or 2 cans diced tomatoes)
- 1/2 purple onion, chopped
- 2/3 yellow bell pepper, chopped
- 2 fresh medium jalapenos, seeded and minced (optional)
- 1/4c chopped fresh cilantro
- 6 TBS extra light olive oil
- 6 TBS red wine vinegar
- Sea Salt & black pepper to taste
- 1 tsp garlic powder
- 1.5 tsp dried oregano
- 2 tsp dried cumin
Instructions:
Mix all ingredients in a medium bowl; cover and refrigerate 4 hours or up to 3 days for best taste. Enjoy cold or at room temp.
