It took me a while to personally jump on the grain-free bandwagon but here I am. And just like many others I’m loving it. I never thought I, a former fat kid and carb lover would be pleasantly content with veggies, fruits and protein.
The above was the mindset I had until I had a pizza craving. A legit pizza craving that wouldn’t go away for days. Previously with my lack of culinary skills I hadn’t thought about making grain-free crust. I had tried my hand at cauliflower pizza crust before and was very underwhelmed.
My pallet drove me to be adventurous in the kitchen and try my hand at making grain-free pizza crust. We had friends staying with us at the time and I warned them, “this is just an experiment(!), don’t get too excited, it may be horrible”.
They loved it! Even their teenager who is quite selective on what she eats. Win!
NOTE: In the pictures I doubled the recipe below and made 5, 6″ small crusts to feed my guests and well…eat more. 🙂 These pizza crusts turned out more chewy than I like so if you like yours a little more crispy, let get a bit more brown than this.
With no further adieu, here’s the recipe….
Guilt- & Grain-Free Pizza Crust
Ingredients:
- 3 large eggs
- 1 TBS water
- 1/4c coconut flour
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/3c parmesan cheese
- Butter for greasing the pan
Instructions:
- Preheat oven to 400° F. (Convection ovens use 350°F.)
- Beat eggs together
- Combine dry ingredients together and add eggs (if the mixture seems too dry, add a TBS of water or more if needed)
- Grease a baking sheet or large pizza pan (approx 12″) with grass-fed butter
- Make 2 small crusts about 8″ in diameter
- Bake for 12-15 minutes until golden brown
- Remove from oven and add your pizza toppings
- Place back in oven until cheese is melty (approx 4-5 mins)
- Remove from the oven and let cool 5 minutes before slicing
