I was making a client a ketogenic diet meal plan to help reverse diabetes and heal her gut when I was faced with a problem. She loves chocolate. So how is she supposed to survive on a keto & healing diet without going nuts?
I had to improvise.
I created this low carb, ketogenic, mug cake with much doubt thinking that this little sugar surely wouldn’t come out well. Oh. My. WORD, was I wrong! This chocolate mug cake is heavenly! It’s sure to hit any chocolate craving you have without all the carbs and sugar! Enjoy!

Ingredients
- 3 TBS unsweetened nut milk (I recommend cashew milk)
- 3 TBS coconut oil, melted
- Splash of vanilla extract
- 3 pitted dates
- 3 TBS Almond Flour
- 2 TBS unsweetened cocoa powder
- ¼ tsp baking powder
- Pinch of salt, optional
- 1 TBS semi-sweet chocolate chips
Instructions
- In a chopper or small food processor, add melted coconut oil, nut milk, vanilla extract and dates. Chop well until dates are minced.
- Add all dry ingredients to an 8 oz mug. Mix well.
- Add wet ingredients into the mug and mix well.
- Microwave on high for 90 seconds. Don’t overcook, as it will make the cake dry. Let cake sit for 2-3 minutes before eating. Enjoy!
