These gluten-free pizzas are fun for the whole family as you make them in ramekins! Dive into deep dish pizza goodness guilt-free! Choosing the toppings, chop it all up, and construct them together. Everyone’s can be different and you can change up the toppings every time!

Ingredients:

  • 1c cooked quinoa
  • 2 c marinara sauce (low/no sugar added)
  • Crumbled goat cheese (preferably raw or other raw cheese)
  • Basil, dried

Choose at least 3 toppings:

  • Bell peppers, any & all colors
  • Onion
  • Pepperoni, nitrate & nitrite free
  • Sausage, nitrate & nitrite free
  • Bacon, nitrate & nitrite free
  • Pineapple
  • Olives
  • Mushrooms
  • Spinach, chopped
  • Baby basil leaves for garnish

Instructions:

  1. Preheat oven to or 425°
  2. In medium-size ramekins, 1st add 1 TBS quinoa & 1 TBS cheese, then flatten it out to cover the bottom. This will give it a crust-like texture.
  3. Add cheese, add all ingredients that you like: green bell peppers, red bell peppers, sausage, mushrooms, touch of garlic, spinach onions, baby basil leaves, etc.
  4. On top, add another layer of quinoa (fill the ramekin but not running over),
  5. Add another layer of sauce, sprinkle more cheese on top, add a pinch of parsley & basil if desired
  6. Put pizzas on a glass baking pan & Cook for 15 minutes.
  7. Let cool for a few minutes before serving. Enjoy immediately!
