I wasn’t always a fan of chicken salad. Most of the ones I tried were too heavy on the mayo and not enough flavor or nutrients. One day I finally decided to try my hand at making a low(er) fat option with a lot more flavor and I’m so glad I did! I needed something nutritious, hearty and flavorful to have on hand for a quick lunch or dinner or to keep in a cooler when we’re camping or out and about. This recipe is perfect for all of the above!
INGREDIENTS:
- 2 cooked chicken breast halves/or rotisserie chicken, shredded
- 1/2 c mayo (this is my favorite mayo lately)
- 1.5 stalks of celery
- 1/2c dried cranberries (or 1c red grapes)
- 1/2 green apple
- 1/4c chopped pecans
- 1/2 lime juice
- 1/4 tsp curry powder
- Salt and pepper to taste
Blend all ingredients together. The longer the cranberry chicken salad melds together in the refrigerator the better!
Enjoy with your favorite bread or my preference, celery sticks!
