I’ve eaten tuna the same way my entire life. That was until I became a mother of 3 and wondered how many times I could serve them tuna for lunch before they were completely over it & would revolt against it.

As I was working to makeover & change-up our lunches I created this fun new spin on tuna (which is actually a whole lot healthier than I made it before. Win!).

When I first introduced this to one of my classes I had both non-Greek lovers and non-tuna lovers, yet they all raved about it!

Here’s the recipe. I’ve written it as 2-3 servings for sharing or left-over purposes. 🙂

Authentic Greek Style Tuna
Total time: 7’ish minutes (plus 5 mins if you haven’t made the dressing.

Ingredients:

  • 1 12oz can wild-caught tuna
  • 2.5 whopping TBS purple onion
  • 2.5 TBS Authentic Greek Dressing (see below)
  • 7 Kalamata olives, pitted, chopped (optional)
  • 1/4c cucumber, peeled chopped
  • 4-5 cherry tomatoes, halved
  • 3 TBS whole fat crumbled feta cheese

Instructions:

Mix all ingredients together in a bowl. Enjoy cold or at room temp. Can be served in a lettuce wrap, atop an avocado or with a sprouted grain pita.

Authentic Style-Greek Dressing

Ingredients:

  • 1/2 c Extra Light Olive Oil
  • 2/3 c Red Wine Vinegar
  • 1 1/4 tsp Dried Oregano
  • 1 1/4 tsp Garlic Powder
  • 1 1/4 tsp Dried Basil
  • 1 tsp Onion Powder
  • 1 1/4 tsp Dijon Mustard
  • 1 tsp Black Pepper
  • 2 tsp Sea Salt

Instructions:

Store in an airtight glass container (I use mason jars). Shake well to blend all ingredients before each use. The Authentic Greek Dressing will stay fresh unrefrigerated for approximately 6 months.
