Chinese Cashew Chicken

 

Ingredients:

4 chicken breasts
8oz apricot preserves (or apricot and peach)
1.5 tsp curry powder
1 tbs Thai curry paste
1/2c Dijon mustard
1c cashews (salted or roasted)

Instructions:

Cut chicken into bite sized pieces and saute over medium heat until cooked. Set aside.
Blend all other ingredients except cashews in a bowl. Cook in skillet on low until it’s reached a thin consistency. Approx 3-4 mins.
Add chicken to preserve blend and coat. Heat for a 2 mins and serve.
Sprinkle cashew on top before eating.
Serve with brown rice or Sobo noodles with stir fry veggies.
