From growing up in Texas, ribs, steak and BBQ were staples in our house. Since I have moved away from home (and have become much more health conscious) I’ve strayed away from ribs & steaks because I hadn’t found where to get clean meats. Until now that is! Since my oldest son had been on a BBQ ribs-kick I was on a mission to find grass-fed beef and forest-raised pork. Thankfully I found Hippo Hollow Farms not too far from me! Grass-fed, grass finished beef, pasture raised poultry & eggs, etc! Check them out if you’re local to Spring Hill, TN! 

What I love about these is that 1.  you don’t have to have a grill, and 2. they’re practically ready when you get home from work or shopping but they’re even better if you pop them under the broiler for a few minute to give them that BBQ glaze that so many love. Try them both ways if you choose!

Ingredients

  • 4 pounds of beef or pork ribs, cut to fit in crock pot
  • 1 1/2 teaspoon of chili powder
  • 1 TBS garlic powder (or to taste)
  • Salt and pepper to taste
  • 1 large onion, chopped
  • 1 15-ounce can of tomato sauce
  • 1 6 ounce can of tomato paste
  • 2 tablespoons of Apple Cider Vinegar
  • 3 tablespoons of Worcestershire Sauce (make sure it’s grain free. I think Lea and Perrins is)
  • 1 tsp liquid smoke (or more, to taste)
  • 1/4 cup honey or molasses (optional)- can also use stevia to taste

Instructions

  1. Chop onion and place at the bottom of a crock pot.
  2. Sprinkle the garlic and chili powder, salt and pepper on the ribs an place in the crock pot.
  3. Mix the tomato sauce, tomato paste, vinegar, Worcestershire, liquid smoke and honey/molasses if using, then pour evenly over the ribs.
  4. Cover and cook on low for approx. 6 hours or until tender.
  5. Turn oven broiler on low. Remove ribs from crockpot and place on a foil lined cookie sheet.  Pour more of the sauce on top of the ribs. (You can use the sauce in the bottom of the crockpot or your favorite clean low-sugar BBQ sauce.) Glazing the top will give it that crispy-ish top.
  6. Place ribs in oven to broil for 8-10 minutes until top is glazed. Watch closely to not burn or overcook.
  7. Enjoy warm!
